Foodie Friday: Swedish meatballs

As someone who doesn't eat pork, I've never had the opportunity to try the famous Ikea meatballs. I decided to experiment making a sauce for some meatballs, adding in either beef or Quorn meatballs (it's way cheaper to buy them than attempt to make your own).


Serves 4

You will need:

Meatballs of your choice, I use two 350g packets of beef meatballs

Onion 1

Beef stock 800ml

Cream cheese 300g

Balsamic vinegar 3tbsp (you can always add more to taste)

Salt and pepper Pinch of both

I like to serve mine with a range of veg and either mashed or roast potatoes


Method:

1. Dice the onion and put half into a large frying pan and the other into a medium saucepan.

2. Add the meatballs to the large frying pan and begin to brown them on a medium heat.

3. Add all the cream cheese to the sauce pan and cook down into a sauce.

4. Gradually add the stock to the cream cheese until all of it has been combined.

5. Add the vinegar and cook on a medium to high heat to cook down and thicken the sauce for 10 mins.

6. Once the sauce has been cooked down, add it to the meatballs in the frying pan. Add salt and pepper if required.

7. Your meatballs are ready to serve with your choice of sides.
