Some days you just need a takeaway, it's a matter of fact. But takeaways can be expensive and generally unhealthy, which doesn't work out well - especially if you're on a budget. I've developed a bank of meals which fill the hole if I'm really craving some takeaway food. Here's one of my favourites...
1. Preheat the oven to 180°C (fan).
2. Boil the kettle and pop in a corn on the cob, cook as per the instructions on the packet.
3. Peel and cut up a sweet potato, make your slices thin enough that they can cook but still fat enough that they don't crumble.
4. Lay a bean burger and the sweet potato slices out on a tray.
5. Spray the sweet potato with some cooking spray and sprinkle on some paprika and peri peri salt (if you like them with a kick!)
6. Cook the burger as per the packet instructions. The sweet potato fries will need about 20 minutes, take them out halfway through to flip them.
7. Prepare your burger bun with toppings of your choice, I used a sandwich thin with salad, cheese slices, chipotle mayo and ketchup.
8. Dish up all your components and enjoy!
