Foodie Friday: Nando's fake-away

For this week's Foodie Friday we have a guest post from one of our readers Beth, she has put together her recipe for her fake-away spicy rice, just like the one you'll get at Nando's.
This one-pot dish should take around half an hour to make so it’s quick and easy, and perfect for accompanying most meals, especially ones with chicken!
You will need:
White rice 200g
Red pepper* 70g
Onion* 50g
Peas or green beans* 70g
Vegetable stock cube 1
Paprika 1tsp
Turmeric 1tsp
Mild chilli powder 1tsp
Cumin 1tsp
Nando’s peri-peri salt – for the real Nando’s flavour! 1tsp
Oil 1 tbsp or 1 calorie oil spray
(* The veggies are optional, you can put however much you like in, these are just my personal recommendations)
Method:
1. Start by dicing the peppers and the onions. These then go into the pan for browning off along with the spices and some oil.
2. Whilst they are in the pan make sure to make up your vegetable stock as per the instructions (usually by adding around 200ml of water).
3. Next, add the rice to the pan, allowing it to toast slightly before adding the stock. You may need to add more water to the pan, making sure there is enough to cover all the rice.
4. Cook on a medium heat, giving time for the water to reduce and the rice to cook.
5. When it looks as though the rice is nearly cooked, add the peas or green beans, they’re added this late as they don’t tend to take long to cook.
6. Once all the water has been absorbed or simmered off then it is time to plate up. At this point you can add extra peri-peri salt on top if you fancy a bit more spice.
And there you have it, the perfect ‘Nando’s’ spicy rice! Affordable and just as tasty, for the days where your bank account doesn’t want what your heart does.
