Foodie Friday: coconut snowmen

These christmassy coconut snowmen are a great dessert idea if you're struggling to think of what else to serve alongside your Christmas pudding. I've made these for a few years and they are a great if you want something lighter after stuffing your face with turkey and roast potatoes. If you've got little ones around at Christmas, these can also be something fun to keep them entertained!


You will need:

Medium egg whites 2

Caster sugar 180g

Desiccated coconut 250g

Decorating icing tubes

Punnet of strawberries (optional)

Snowflake sprinkles (optional)


Method:

1. Pre-heat the oven to 160°c (fan).


2. Crack your eggs and separate the whites from the yolk. Put the whites in a large mixing bowl, you can just throw away the yolk or you can keep them to put in an omelette or scrambled eggs.

3. Whisk the egg whites until they make stiff peaks.

4. Whisk in the sugar, until it is glossy. Don't worry about losing the stiff peaks, it doesn't have to be like a meringue mixture.

5. Fold in the desiccated coconut.

6. Make balls from the mixture and put onto a baking tray lined with greaseproof paper. I like to use an egg cup and then squash the top down so there is enough room for their strawberry hats later.

7. Cook in the oven for 10 mins or until a light golden colour.


8. Remove from the oven and leave to cool.

8. Once cooled, use the icing tubes to pipe on their carrot shaped noses and black coal eyes.

9. If using the strawberries. Cut the stalks off the strawberries and place on their heads for a little hat.
