Foodie Friday: carrot cake cookie

You may come to learn that I love Disney, and I also love trying to recreate snacks which can be found in the Disney parks. When I caught wind of a carrot cake cookie, I decided I had to try it!

I initially followed this recipe from The Lovebugs Blog but as I was going along I adapted it to be more cost effective and slightly healthier with regards to the ingredients.


So what is a carrot cake cookie? Is it a cake? Is it a cookie?

A carrot cake cookie is essentially two small cakes, sandwiched together with cream cheese frosting to look like a cookie sandwich.


Makes approx 6 cookies

You will need for the cake:

Plain flour 170g

Baking soda 1 tsp

Salt 1/4 tsp

Ground cinnamon 1 tsp

Eggs 2

Sugar 130g

Vegetable oil 140ml

Vanilla essence 1/2 tsp

Applesauce 160g

Carrots (grated) 2

You will need for the frosting:

Butter (room temperature) 100g

Light cream cheese (room temperature) 100g

Icing sugar 220g (could be more or less depending on consistency)

Vanilla essence 1 tsp


Method:

1. Preheat oven to 180°C (fan oven).


2. Line baking trays with greaseproof paper and spray with cooking spray.


3. In a bowl mix together the flour, baking soda, salt and cinnamon.


4. In another bowl mix together the eggs, sugar, oil and vanilla.


5. Add the applesauce and carrots to the wet mixture.


6. Combine the two bowls to create your final mixture.


7. Spoon the mixture onto the baking trays, the mixture won't spread much so you should make them however big you want your cookies to be (I would recommend smaller than I made in my photographs).


8. Bake for around 11 minutes (or until a skewer comes out clean).


9. Transfer them to a cooling rack.


10. Prepare the frosting; beat together the butter and cream cheese with an electric mixer (stops you getting too many lumps!).


11. Add the powdered sugar and vanilla and mix it all together until it is creamy.


12. Pair together the cookies depending on shape/size.


13. Spoon the frosting onto one cookie and then press the other half on top.
